As I immerse myself in the Italian culture and cuisine, one of my specialties is sea foods. I'm always wanting to learn what fish is native to the country. What natural herbs are available to enhance the flavors to prepare these fish dishes and how they were served. Being Chinese/Irish,trained in French cuisine and spending time in an Italian neighborhood in San Francisco has made my style of cooking a fusion of many cultures. It is now that I wish to learn more authentic Italian dishes and where the flavors come from! Hopefully I will be able recreate tradition dishes to go with the Italian flavors of my creations!
