Description
Roasted Potatoes with Rosemary... a side dish for all occasions.

  • 1 Lb - Potatoes
  • 1/4 Cup - Grated pecorino cheese
  • 1/2 Cup - EV olive oil
  • 1 Tbs - Rosemary (fresh or dried)
  • Salt & pepper

Directions/Steps
  • Cut the potatoes in wedges and put them in a mixing bowl.
  • Add the oil and mix well.
  • Add the rosemary and mix well.
  • Add the cheese and mix well.
  • Add salt and pepper to taste and mix well again.
  • Put the potatoes in a flat oven pan and spread them well. Cover with aluminum foil.
  • Pre-heat the oven to 375F and bake for 30 mins.
  • Remove the foil and bake for an additional hour or until potatoes reach the desired color.
