Tagliatelle Arricciate

Description

Home Made Curled Tagliatelle with Home Made Sausage... it doesn't get any better.

For the Pasta:

  • 1 Lb - Flour
  • 1 Egg
  • Pinch of salt
  • Water as needed
For the Sauce:
  • 1 Qt - Tomato paste
  • 1 Lb - Fresh Italian sausage
  • 2 Cloves garlic
  • 1 Small onion
  • 4 Tbs - EV olive oil
  • 1 - Small peperoncino
  • Salt 

Directions/Steps
recipe image 1) Roll the dough into a round flat form.
recipe image 2) Fold the roud dough and cut into strips 1/4 inch wide.
recipe image 3) Take each strip, hold at one end and with the other hand roll it on the table until it is completely curled. Then fold in half.
recipe image 4) When you are done cutting and curling you will have a nice tray full of Tagliatelle Arricciate.  Sprinkle some flour on them and they are ready to be boiled.
recipe image 5) Of course you will also need some fresh Italian sausage.  Here Nonna Rosetta with the help of Nonno Ciriaco is making a fresh batch.
recipe image 6) Now is time to make the sauce. In a saucepan add 4 Tbs of olive oil, chopped garlic and onion. As the garlic is turning golden add the sausage cut in 1 1/2 inch pieces. Let the sausage saute` for 5 minutes. Add the tomato paste and cover the pan. Cook at mediun heat for 1 12/ hours. Add parsley and serve over the tagliatelle.
