Apple Stuffed Pork Chops

Description

My sweetie is a big fan of pork chops and this is one of his favorite ways for me to fix them. It is not a quick week night recipe but a nice treat to serve up on the weekend. The process is simple and the wait for them to come out of the oven is well worth it!

Ingredients
  • 4 1” thick pork chops
  • ¼ cup margarine
  • 2 tablespoons chopped onion
  • 3 tablespoons chopped celery
  • 1 cup fresh bread crumbs
  • 1 cup chopped apples
  • 2 teaspoons dried parsley
  • Salt & Pepper
  • ¼ cup oil

Directions/Steps
  1. Trim fat from pork chops and slice as deep a pocket as possible. Salt and pepper the insides of the pockets.
  2. Saute onion and celery in margarine.
  3. Add bread crumbs, apples and parsley. Stir and remove from heat.
  4. Spoon into pockets and secure with toothpicks.
  5. Heat oil in skillet on medium high and brown both sides of chops.
  6. Place in a greased 9×13 pan and cover with foil
  7. Bake at 350 degrees for 30 minutes.
  8. Uncover and bake for 30 more minutes.
