Description

Asparagus and Egg Salad... a great Easter dish or anytime!

Ingredients
  • 3 large eggs
  • 1 pound asparagus (white preferred) trimmed
  • Salt
  • 2 tablespoons chopped fresh flat~leaf parsley
  • 1 tablespoon chopped fresh chives
  • 2 tablespoons extra~virgin olive oil
  • 1to 2 tablespoons fresh lemon juice freshly ground black pepper
