This is my Aunt Marie's famous Oyster Dressing which is unlike any other dressing you have ever tasted! My Aunt Marie--who is really just a close family friend-- created this deep south dressing recipe using oysters which we have in abundance in Charleston, SC. Growing up in the low-country of SC I used to go digging for oysters with my father under a bridge near our home and we would eat them raw right out the shell flavored only with a squirt of lemon juice, don't all Italian Fathers carry a shucking knife and lemon in their pant's pocket?! This recipe reflects my low country roots as well as my Italian roots which both incorporate fresh, local, in season, ingredients creating something I like to call "Deep South" Italian cooking ; )

  • 1 loaf Jewish Rye bread crumbled
  • 1 pint (2 cups) oysters shucked with some of the juices
  • 1/2 stick butter plus more for greasing pan & topping
  • 4 celery ribs (with leaves) chopped
  • 1/2 large onion chopped
  • 1/4 teaspoon caraway seeds
  • 1/2 teaspoon sage
  • 1 teaspoon poultry seasoning
  • a few sprigs fresh thyme or 1/2 teaspoon dried
  • salt and pepper to taste
  • 3/4 - 2 cups milk (depending on how much juice you get from the oysters.
  • 2 eggs beaten
