- 1 lb thick cut Pancetta (if not available, regular thick cut bacon can be used)
- 1 4oz of each cheese shredded:
- Mozzarella
- Parmesan
- Romano
- Provolone
- Asiago
- Reggiano
- 6 Roma tomatoes (sliced about 1/4 inch thick)
- 1/4 cup Basil minced
- 1/4 cup E V Olive Oil
- 1 clove of garlic (minced)
- 1 small red onion (minced)
- 1/4 cup balsamic vinegar
- 1 teaspoon salt
- 2 teaspoon ground black pepper
- 2 teaspoon red flake peppers
