Description

It's a nicely flavored soup to fight off a winters chill!

  • 12 large broccoli stalks (washed and chopped into 1/2 inch chunks, reserving some florets for garnish)
  • 4 medium potatoes (peeled, cubed and boiled)
  • 1 bunch of Cilantro/Parsley (chopped)
  • 1/4 lb Bacon/Pancetta (cooked til crispy and crumbled for Garnish).
  • 1 oz EV Olive Oil
  • 1/2 cup white wine
  • 1/2 cup cream
  • 1/2 cup water
  • 4 teaspoons garlic (minced)
  • 4 teaspoons sweet onion (minced)
  • 4 teaspoons basil (minced)
  • 2 teaspoons dry oregano
  • 1 teaspoon salt
  • 2 teaspoons ground black pepper
  • 1/4 cup walnuts (chopped and cooked with bacon as garnish)
