Carrot-Ginger Beef Wraps

This month’s Improv Cooking Challenge hosted by Kristen from Frugal Antics of Harried Homemaker required the use of both carrots and ginger. Since the February food theme at Carolina HeartStrings is “Food from the Heartland” I decided to do a beef wrap. The use of ginger prompted me to pull together a few other ingredients that have an Asian accent. I chose to serve these in wraps but if you prefer you could serve this over rice. Also I recommend using fresh ginger. If you don’t think you will use up the remaining ginger shortly after purchase go ahead and freeze it using a technique I posted a few months ago.

Ingredients
  • 2 tablespoons fresh ginger, chopped fine
  • 1 cup juliened carrots
  • 1 red pepper, chopped
  • 3-4 garlic cloves, minced
  • ½ teaspoon salt
  • 1 cup cooked broccoli florets, chopped
  • 3 tablespoons soy sauce
  • 1 lb flank steak sliced thin against the grain 2” lengths
  • 6 wraps
