  • 1 pound cavatelli pasta
  • Salt
  • 2 cups chicken stock
  • 1/2 teaspoon saffron threads (3 pinches)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fennel seeds
  • 1 pound coarsely ground pork
  • 1 teaspoon ground sage
  • 1 teaspoon crushed red pepper flakes
  • 2 teaspoons smoked sweet paprika
  • 4 large cloves garlic grated (use extra coarse microplane grater)
  • 1 medium onion, finely chopped
  • •1/2 small bulb fresh fennel, finely chopped (use vegetable peeler on outer bulb to remove tough chewy veins)
  • 1 can tomatoes (28 ounces), preferably San Marzano
  • large fresh leaves basil, torn
  • Grated Pecorino Romano cheese

Additional Tips

I am allergic to black pepper. You may add it to this dish when browning the pork. I add a little more red pepper flakes to compensate.
