Chop Chop Antipasto Salad ___
Ingredients
For the salad
- 1 head romain lettuce, chopped
- 1 small cucumber, chopped
- 1 15.5 ounce can chickpeas, drained
- 6 ounces Genoa salami, chopped
- 6 ounces prosciutto, chopped
- 0.25 cup peperoncini, chopped
- 0.25 cup sun dried tomatoes, chopped
- 0.5 cup shredded mozzarella
For the dressing
- 0.5 cup Extra Virgin Olive Oil
- 0.25 cup red wine vinegar
- 1 tablespoon oregano
Directions
- To prepare dressing, whisk ingredients in a mixing bowl. Slowly pour oil in a steady stream while whisking to incorporate. Set aside.
- Combine all salad ingredients in a large serving bowl. Toss with dressing to coat.
