  • 1/2 pound fresh spinach fettuccine 
  • 2 Tablespoons olive oil
  • Sea Salt - freshly ground
  • Black pepper - freshly ground
  • 1 Shallot finely chopped
  • 1 Tablespoon unsalted butter
  • 1 clove of garlic - chopped
  • 1 Cup baby spinach leaves or regular spinach torn
  • 1 tablespoon dry vermouth
  • Fresh thyme leaves one sprig or to your taste 
  • 1/2 cup Heavy Cream
  • 1 oz Gorgonzola cheese crumbled
  • 2 Tablespoon Parmigiano Reggiano cheese freshly grated
  • 1/8 cup Pine nuts or coarsely chopped walnuts very lightly toasted in small frying pan
  • Optional 2 tsp chives snipped
