EZ Cauliflower Florets

Description

Cauliflower is low in fat and calories. It can also be eaten raw. Buy heads that are firm with clean white stalks.

Ingredients
  • 1 Head of cauliflower
  • 3 eggs
  • 3 teaspoons of grated parmesan cheese
  • salt and pepper to taste
  • 3-4 tablespoons of oil
  • Pot
  • frying pan

Directions/Steps
  1. Remove all the green leaves from the cauliflower.
  2. Cut off the bottom stalk.
  3. The florets should be cut into similar size pieces (so they cook evenly).
  4. Rinse the cut florets with cold water and drain.
  5. Put florets into a pot and fill with water.
  6. Bring the water with the florets to a boil.
  7. Check to see if the florets are cooked.
  8. They should not be too soft or too hard (too soft they will fall apart).
  9. If they are cooked remove (if not.... cook for a few more minutes).
  10. Drain the florets and set aside.
  11. Crack the 3 eggs into a cup, add the 3 teaspoons of cheese and scramble them together.
  12. Put the oil into the frying pan and heat oil.
  13. Place all the cooked florets into the frying pan and let them fry until both sides Lightly brown.
  14. Once both sides have a lightly brown color, drain oil from frying pan.
  15. Put the fried florets back into the frying pan and add some salt and pepper to taste.
  16. Pour the egg and cheese mixture over all the florets that are in the frying pan.
  17. Let them fry for a about a minute or two until the egg mixture sticks to the Florets.
  18. Then turn them over and let the rest of the egg cook.
  19. Once the egg mixture on both sides of florets is cooked, remove the cauliflower florets and place on a plate to serve.

I am happy to say that my picky Mexican husbans really liked this recipe. Thankfully I now have a new way to prepare califlower that my picky children like as well.
