Description

This recipe is a family favorite, and it’s all about making the fish the star of the meal. A delicate poach in olive oil cooks the fish to perfection!!! To make the tomato sauce, plum tomatoes and garlic are roasted then pureed with balsamic vinegar and a touch of smoked paprika for depth of flavor. The rosemary and black olive relish, with a touch of lemon zest, compliments the fish and adds to delicious savoriness of the dish. This easy recipe is a beautiful feast that can be served in any occasion. Enjoy fish with your famiglia at your next gathering!!!

Ingredients
  • 6 plum tomatoes, thick-sliced and quartered
  • 3 medium garlic cloves, peeled
  • 6 tablespoons olive oil, plus about 6-7 cups olive oil for poaching, divided
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon smoked paprika
  • Kosher salt, to taste
  • 1 medium sweet onion, peeled, diced
  • 2/3 cup pitted, coarsely chopped black olives
  • 2 teaspoons coarsely chopped rosemary leaves
  • 2/3 cup diced fire-roasted red pepper
  • 1/2 teaspoon grated lemon zest
  • 1/4 teaspoon coarsely ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 4 (5-6 oz.) skinless, halibut fillets or other firm fish
  • Coarsely chopped Italian parsley, for garnish
  • Extra virgin olive oil, for finishing, if desired
