Grandpa's Chicken

Description

This recipe was a favorite that my grandfather made, which he learned from his father. They came from Santo Spirito, Bari, and grew their mint for this recipe and iced tea. It always smells so good on the grill and then simmered before serving to get the chicken to have the minty garlic flavor all the way through. Now my children ask for "grandpa's chicken".

Ingredients
  • ‎2 cups Red Wine Vinegar
  • 3 Tbs garlic powder
  • 1 Tbs minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oregano
  • 1 oz fresh mint, crush leaves on stems and tie with dental floss, break small leaves into small bits
  • 1 Tbs dried mint
  • 3 Tbs water
