Lover's Chocolate Cake

Description

A rich moist Chocolate Layer Cake, with mouth watering Chocolate Ganache Frosting, covered with crunchy chocolate curls... a Triple Thread...

Ingredients
  • 2-2/3 Cup unbleached All-Purpose Flour
  • 2 Cups Granulated Sugar
  • ½ Cup unsweetened rich Cocoa Powder
  • 2-1/4 teaspoons Baking Soda
  • 1 Tablespoon Espresso Granules
  • ¾ teaspoon Salt
  • 1-1/2 Sticks (6 Ounces) unsalted Butter, room temperature
  • 1-1/3 Cups Sour Cream
  • 4 Ounces unsweetened Chocolate melted and slightly cooled
  • 3 Large Eggs
  • 1-1/2 teaspoons pure Vanilla Extract
  • grated chocolate or curls, to decorate
  • FOR THE GANACHE
  • 8 Ounces good-quality dark chocolate , as above
  • ½ Pint heavy cream (whipping cream)
  • 2 Tablespoons packed light brown sugar

Additional Tips

The cake can be baked and cooled, then wrapped and frozen (without the icing). Bring to room temperature to ice when needed.
