This recipe is from Mrs. Bazagalupi, my neighbor, who taught me so much about Italian cooking. She showed me how much she loved being a mother; and even though she had a big family, she always made room for me in her heart.

  • 1 cup olive oil
  • 1 tablespoon garlic, minced
  • ¼ cup lemon juice
  • ¼ cup parsley, chopped
  • 2 packages fettucine (2 pounds)
  • 2 pounds cooked and chilled salmon filet
  • 1 cup frozen peas
  • 1 cup red onion, diced small
  • Additional chopped parsley
  • Ground pepper

Additional Tips

When the salmon is cooked and refrigerated over night, it firms up and won't fall apart when it's tossed with the fettucine. The heat of the pasta warms up the salmon and peas. Using peeled, cooked shrimp works really well, too.
