Nonna Gentile's Seafood Sauce

Description

This is a recipe that my great grandmother, Maria Gentile, created and my Mom has made every year for New Year's Eve. I decided to treat my Mom to this as part of her Mother's Day present.

Ingredients
  • 1lb Med. Shrimp raw
  • 2 doz littleneck Clams
  • 1lb Bay Scallops
  • Lobster Tail (optional. I used 2 nice sized Crab Legs)
  • 2 Cod Filets
  • 4 Tillapia filets
  • 2 28oz cans Tuttarossa Crushed Tomatoes
  • 1 28oz can Tuttarossa Puree
  • 1 small can Tomato paste
  • 1/2 Vidallia onion diced
  • 2 cloves garlic diced
  • 2 tbl Good Seasons Italian Dressing
  • 1/2 cup red wine
  • Pinch fresh basil, thyme leaves and oregano chopped fine
  • Pinch black pepper
  • 2 turns Extra Virgin Olive Oil to coat pot

Additional Tips

When the sauce is done and before you serve it, make sure that your clams have all opened. Discard any that haven\'t. The salad dressing is something that my Great Grandmother added because it countered any icky "fishy" tastes without taking away any of the AMAZING fish flavors. The woman was a culinary genius! I added the tillapia. It melts into the sauce and just adds to the rich, full flavor. I usse vidallia onions in this sauce to add that little touch of sweetness. It is important to keep your clams and shrimp cold until you are ready to use them, so always clean them in cold water and keep them in the fridge until it is their turn. Enjoy!
