Description

I love couscous and I found a whole wheat version at Trader Joe’s. The perfect grain for our Food from the Heartland month and I knew just what I wanted to pair it with! Grilled vegetables and Parmesan cheese.

Ingredients
  • 1 cup water
  • 2 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup whole wheat couscous
  • 1 cup mushrooms, sliced
  • 1/4 cup Parmesan cheese
  • 1 cup spinach, raw
