Description

  • 1 pound uncooked linguine
  • 3 cups sugar snap peas without strings
  • 2 or 3 tablespoons butter
  • 1 to 2 pounds salmon fillet, or 2 cans red salmon
  • 2 cups fresh sliced mushrooms
  • 2 cups chopped onion
  • 2 cups fat-free chicken broth
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoon dill weed
  • 1 tablespoon Herbs de Provence
  • ½ cup white wine
  • ½ cup fat-free half and half

Additional Tips

I have found that the flakes of fresh salmon are more satisfying and appealing than the canned salmon. It does not affect the flavor, though. I used frozen sugar snap peas. Fresh peas would be fine, as well. Heavy cream could be used, instead of the half and half, if calories weren't restricted or if you want a richer sauce.
