Description

I'm entering this into the recipes I'd like to cook for my mother opportunity. Even though she's gone now, she would love this! She was growing heirloom tomatoes before anyone knew what they were, saving seeds from year to year, and she loved everything fresh and local. Basil was her favorite herb, and it's the star in this dish. She also introduced me to the many splendors of cooking for yourself, and taking care of yourself.

  • 1 clove garlic, quartered
  • 2 cups fresh basil leaves, packed tightly (plus extra for garnish)
  • ¼ cup pine nuts or walnuts
  • 1/3 cup extra virgin olive oil
  • 1/3 cup freshly grated Parmesan cheese
  • ½ cup plain yogurt
  • Salt and freshly ground pepper, to taste
  • 1 pound penne or other similar sized pasta
  • ½ pound fresh mozzarella cheese, cut into slices
  • 2 large fresh tomatoes, sliced
