Description

Delicious Tiramisu` cupcakes with an espresso Mascarpone icing.

Ingredients
  • 1 cup + 2 tbsp raw sugar
  • 1/3 cup hot brewed espresso (instant espresso will work)
  • 2 tbsp rum
  • 6 eggs, at room temperature
  • 1 cup all-purpose flour
  • 1/4 tsp sea salt
  • 1/3 cup unsalted butter, melted
  • 2 cups mascarpone cheese (32 oz)
  • 3/4 cup powdered sugar
  • Milk chocolate, shaved

The cupcakes definately need to be made fresh-the day you are going to serve them, they get "deflated" easily and dry out on the edges without frosting. Becareful scooping into the pan, my 3rd set was "flat".
