I love a chicken salad sandwich and there are as many variations as there are cooks. I usually make a pretty standard chicken salad recipe, you know the one, chicken, celery, sometimes grapes, pecans, a favorite of mine for sure, but I wanted to do something different using what I had on hand. The light bulb went on (can you see it over my head) when I saw the apples in my crisper. I immediately thought of the Waldorf salad my mother would always make for special occasions. I loved the crunchy sweet apples and the nutty taste of walnuts together and since I know chicken tastes amazing with grapes I thought it might just take the Waldorf salad to a new level and I was right. This is a wonderful way to make a chicken salad to put on your favorite type of bread, croissant or even resting on a bed of lettuce leaves. Dig in and enjoy!
