La Rasola

 

 

La Rasola is a very old tool used by ladies in Puglia to make Orecchiette and Cavatelli. This particular elegant Rasola was made for me by a dear fan, Luigi Liuzzi, living in Los Angeles, CA. His family is originally from Conversano (Puglia). Luigi had seen some photos of me holding a Rasola owned by a chef from Puglia while he was visiting the US and asked me where he could buy one. As they are virtually non-existent in the US and very difficult to find even in Italy, he made two of them, one for himself and one for me. Grazie Luigi!
