  • 2-5 oz Cans Italian Tuna packed in Olive Oil
  • 1-19 oz Can Chickpeas, drained and rinsed
  • 1 1/2 Cups Cherry Tomatoes, sliced in half
  • 1 Small Red Onion, cut into a 1/4 inch dive
  • 1/2 Cup Pitted Gaeta Olives
  • Zest of and Juice of 1 Lemon
  • 2 Tablespoons Fresh Parsley chopped
  • 1/4 Cup Extra Virgin Olive Oil
  • 1/4 Cup Red Wine Vinegar
  • Salt and Black Pepper as desired

Directions/Steps
  1. In a large mixing bowl combine all the ingredients and mix well.
  2. Taste for seasoning and add salt and pepper as desired.
