Olive Oil Pancakes


For the Pancakes:

  • 1 cup all purpose flour
  • 1 cup almond flour
  • 0.5 teaspoon baking soda
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.25 cup light brown sugar
  • 1.5 cups whole milk
  • 1 teaspoon almond or vanilla extract
  • 2 large eggs
  • 4 tablespoons extra virgin olive oil


In a large mixing bowl whisk together all of the ingredients until smooth. (It's totally fine if there are a few lumps!)

Heat a griddle or heavy skillet over a medium-high flame. Pour about 1/4 cup of the batter onto the skillet and cook until tiny bubbles form on the surface, about 2 minutes.

Flip and cook 1-2 minutes more.
