Description

This burger recipe is packed with flavor and combines a meatball come burger patty with caramelized balsamic onions, grilled roasted red peppers and blue cheese on a toasted white bun. After all, it's all about the red, white and blue!

Makes
4 burgers
  • 24 oz ground chuck
  • 2 cups Parmigiano Reggiano or Pecorino Romano
  • a large palm full of dried Italian seasoning
  • 2 large eggs beaten
  • 1/2 cup diced brown onions
  • kosher salt
  • freshly ground black pepper
  • 4 bleu cheese slices or crumbles
  • 2 large red bell peppers
  • 3 cloves of sliced garlic
  • olive oil to cover peppers after roasting
  • plastic container or glass jar with lid
  • 3 tablespoons olive or vegetable oil
  • 3 medium red onions cut in half and thinly sliced
  • kosher salt and ground black pepper
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon of sugar
  • 4 buns of your choice lightly toasted on the grill.

Additional Tips

The roasted red peppers become more flavorful when made ahead of time and stored in the garlic oil. If you do not want the onions on to of the burger then you can heat them in the skillet or microwave just before building. The onions can be made a couple of days ahead of time and stored in the refrigerator. The patties can easily be varied. If you have a superstar meatball recipe, you can easily use that as your burger patty. Here I just used the ground chuck to appeal to people on a budget as it is usually on sale most of the time and has a wonderful flavor for burgers.
