Hi Rossella, in Florence Holy Friday is a very important day, and is respected the tradition of fasting. Adults have only one meal without meat. I've not been making pizza rustiche for the last couple of years since we all have been trying to watch our calories/cholesterol. I've been a good boy since then.So,why not. I'll be making a smaller one this year.
On Good Friday,I'm planning on making calamarii al' Luciana which is simply calamari steamed in its' own liquid with plenty of garlic,parsley,pepperoncini, loads of bread for scarpata & a nice chilled bottle of Orvieto or Frascati.
