  • 2 Medium Eggplants
  • 1/2 Lb - Mortadella
  • 4 Cups - Tomato sauce
  • 1 Lb - Fresh mozzarella
  • 2 Cups - Grated Parmigiano cheese
  • 1 Medium onion
  • Salt & pepper
  • EV olive oil
  • Olive oil for frying

Pastella Ingredients:

  • 4 Eggs
  • 1 Lb - Flour
  • 1/2 Cup - Grated Parmigiano cheese
  • 4 Cloves of garlic - very finely chopped
  • 1 Tbs - Fresh mint - very finely chopped
  • Water
