Italian Tri Color Cookies (Valentine's)

  • 3 pans 8 1/2 X 11 1/2 X 1 3/16
  • 4 Eggs
  • 2 Sticks of Margarine (Melted)
  • 1 cup of Sugar
  • 1 Cup of Gold Medal Self Rising Flour
  • 1 Teaspoon of Vanilla Flavor (optional)
  • 6-8 oz of Chocolate Chips (semi-sweet morsels)
  • 1 Teaspoon of Oil
  • 1 Jar of Apple Jelly (Instead of this you could use a different jelly or jam)
  • Cisco
  • Electric Mixer

  1. With the Electric Mixer... Beat the 3 eggs for 5 minutes.... then add the sugar and beat for 3 minutes... then add the melted margarine and beat for 2 minutes... then add the flour and the 1 teaspoon of vanilla flavor and beat for 5 minutes. (in total beat 15 mins)
  2. Separate mix into 3 bowls... In one of the bowls add red... next bowl add the yellow... next bowl add the green.
  3. Grease the 3 pans with crisco and then... In one pan put the red... In the other pan put the green... In the other pan put the yellow.
  4. Bake for 8-10 minutes
  5. Take the apple jelly out of the bottle and put it in a pot to melt... keep stirring and then take off the stove.
  6. Spread the Melted Apple Jelly between the 2 layers. (example... place the red layer down and spread some of the apple jelly on it.(save some for the next layer).
  7. Next... place the yellow layer on top of the red layer. Again spread the rest of the apple jelly on top of the yellow layer.
  8. Next... top it off with the green layer.
  9. On the top layer you are going to spread the melted chocolate.
  10. To melt chocolate... you need a double boiler pan... place the chocolate chips and 1 teaspoon of oil on the top pan of the double boiler. Stir until it melts.
  11. Spread the melted chocolate on the top layer.
  12. I bake them one day before and put them in Ref or you can put them in your frezzer for a week. Then spread the chocolater the day you need them and put in the ref. for about 5-10 minutes before you cut them.
