Frittata di Pasta

Frittata di Pasta... a quick pasta quiche.


For 2 Person(s)

For the Pasta:

  • 1/2 pound Pennette (or any pasta of your choice)
  • 4 large eggs
  • grated cheese
  • fresh parsley
  • salt
  • extra virgin olive oil


  1. Cook the pasta "al Dente".
  2. In a bowl, beat the eggs.
  3. Add the cheese, chopped parsley and a pinch of salt.
  4. Add the pasta to the beaten eggs and mix well to coat the pasta  uniformly.
  5. In a pan add some olive oil and as soon as it gets hot add the pasta.
  6. Flatten the pasta so that it forms a very flat surface.
  7. Cook until the bottom of the pasta forms a golden crust.
  8. Carefully flip the pasta in the pan with the aid of a flat plate.
  9. Cook until the other site has also formed a golden crust.
  10. Move to a serving plate, cut in slices and serve.
