Pizza Faccia di Vecchia

Pizza Faccia di Vecchia.  An old recipe from Torretta, Sicily.


For 4 Person(s)

For the Pizza:

  • 1 pound pizza dough
  • 28 ounces crushed tomatoes
  • 1 pound day old Italian bread with crust removed
  • 1 small onion, chopped
  • 1/2 cup Primo Sale cheese, shredded
  • 1/2 cup Pecorino cheese in small cubes
  • 2 tablespoon oregano
  • 1/4 cup extra virgin olive oil
  • salt


  1. Preheat a pizza stone in the oven at 500F.
  2. Remove the crust from the Italian bread and break the inside into small piece by hand and place in a bowl.
  3. Add the tomatoes and mix well, with your hands preferably.
  4. Add the cheeses, the onion, the oil, the oregano and the salt and mix well.
  5. Take 1/4 of the dough, flatten it into a round shape, and spread some of the mix all over it.
  6. Bake for about 15 mins on the hot pizza stone.
  7. Serve immediately.
