Almond Coconut Custard Tarts

This is a very simple tasty tart with a creamy coconut almond flavor! your social media marketing partner
  • 1 dozen eggs.
  • 1/2 cup shredded coconut.
  • 1 can sweetened condensed milk.
  • 1 teaspoon almond extract.
  • 1 package ready made pie crust.
  • spray oil.

  1. Using a twelve count cupcake pan. Spray with oil to prevent sticking. Unroll the pie crust and divide into twelve pieces and shape into pie shells in the cupcake pan and set aside for the filling.
  2. In a large mixing bowl crack the dozen eggs and mix with a whisk. Using a strainer and a second bowl,strain out the egg membranes. This will make the custard smoother. Add the almond extract, coconut, and the sweetened condensed milk and mix. Using a ladle, spoon enough into each cup making sure not to overfill. The filling will puff when baked.
  3. In a preheated oven at 350 degrees, place the cupcake pan on a baking sheet and set in the center rack. Bake for 20 minutes at 350 degrees, check with a toothpick before removing. Cool,dust with confectioners sugar and serve!
