For the cannoli:
- 1 7oz jar Pistachio spread
- 1 pound mascarpone cheese, room temperature
- 1 cup confectioners sugar, plus more for sprinkling at the end
- 9 large cannoli shells
- Crushed pistachios for garnish

- Yield: fills 9 large cannoli shells.
- In a large mixing bowl, add the pistachio spread and mascarpone cheese. Beat using an electric mixer until smooth.
- Add the confectioners sugar to the bowl and mix in with a spoon or a spatula until fully absorbed.
- Pipe into cannoli shells and sprinkle with crushed pistachios and confectioners sugar.
- Enjoy immediately or slightly chilled.
