Caprese Pasta Salad with Basil Sauce

Ingredients

For 4 Person(s)

For the Pasta:

  • 1 pound Cavatappi pasta
  • 1 pint grape or cherry tomatoes, sliced in half
  • 1 pound Ciliegine mozzarella
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • fresh basil leaves for garnishing

For the Basil Sauce:

  • 1/4 cup fresh basil leaves, packed
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt

Directions

  1. Pasta preparation:
    1. Cook the pasta in a large pot of generously salted boiling water until al dente. Drain and run under cold running water.
    2. Transfer to a large mixing bowl and toss with the the tomatoes, mozzarella, oil and salt.
  2. To make the basil sauce:
    1. In the bowl of a food processor combine the basil and extra virgin olive oil. Purée until smooth.
    2. Toss with the pasta salad and chill before serving.
