For the Pancakes:

  • 1 cup all purpose flour
  • 1 cup almond flour
  • 1/2 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup light brown sugar
  • 1 1/2 cups whole milk
  • 1 teaspoon almond or vanilla extract
  • 2 large eggs
  • 4 tablespoons extra virgin olive oil

  1. In a large mixing bowl whisk together all of the ingredients until smooth. (It's totally fine if there are a few lumps!)
  2. Heat a griddle or heavy skillet over a medium-high flame. Pour about 1/4 cup of the batter onto the skillet and cook until tiny bubbles form on the surface, about 2 minutes.
  3. Flip and cook 1-2 minutes more.

Yield: About 20 Pancakes

Note: These can also be made ahead of time and reheated. To reheat in the oven simply preheat the oven to 350 degrees. Place the pancakes in a single layer on a baking sheet and cover tightly with foil. Bake until the pancakes are heated through, about 7-10 minutes. You may also reheat them in the microwave by placing up to 5 pancakes at a time on a microwave safe place and microwaving them for 30-60 seconds depending on wattage.
